  • Where does the ingredient data come from and how are the ingredients selected?
All ingredient data is sourced from the USDA database, which is the source for food composition data in the United States for both public and private sectors. We reviewed ingredient lists and selected typical ingredients used for baking and pastry recipes, including flours, sugars, butter/oils, milks (animal and plant-based), eggs, nuts/grains, juices, fruits/vegetables, flavorings, leaveners, chocolate, and alcohol. Categories we specifically excluded are: meat/fish, many vegetables, pre-packaged mixes, or pre-packaged food product. In general, we do not list branded foods, except in the case that the brand is commonly known and/or the only ingredient available in the database.
  • Why did we choose these components?
For each recipe, we list the combined amounts of gluten, protein, starch, fat, sugar, water, and salt for each ingredient entered and display that in the By Component graph. We list these components because, for many baking and pastry recipes, they impact the outcome of a recipe. When making substitutions, the application will automatically calculate the components for the total ingredients so you can see the total percentage of each in any recipe. You can compare this graph with the By Category graph that lists categories important in baking, like flour, butter/oil, eggs, leavener, fruit, and others.
